Scotch Ale Pairing:
Build a Beef Wellington (or Deconstructed Beef Wellington)     
10 oz. seasoned stockyard sirloin steak char grilled to order, served atop a fresh herb au jus; accompanied by a wild mushroom duxelle baked in puff pastry and a twice baked potato
